Raw animal food stored over or with unwashed produce. Raw shell eggs were stored directly above avocados on wire shelving in the tall cooler. Operator moved to proper storage hierarchy.
Squeeze bottle containing toxic substance (bleach) stored on top of the dish machine not labeled. Employee removed bottle for labeling.
Ceiling/ceiling tile shows damage or is in disrepair. Ceiling tiles in the back kitchen had water stains.
Equipment in poor repair. Multiple cooling units had severely torn gaskets. Operator said they have been ordered. Educated Operator that keeping gaskets in good repair keeps them smooth and easily cleanable and helps minimize wear on the cooling system.
Silverware/utensils stored upright with the food-contact surface up, stored as clean in a caddy on the clean dish storage. Educated dish staff on proper storage of clean silverware.
Nothing was found. The inspector recorded no violations at all.

Water with a temperature of least 85 degrees Fahrenheit not provided/shut off at employee handwash sink in the kitchen. Valve was turned off. Operator opened valve and restored hot water.
Employee beverage container on a food preparation table or over/next to clean equipment/utensils. Cup with a straw was stored next to clean plates on the clean dish shelving.
Employee with no hair restraint while engaging in food preparation preparing red potatoes.

Raw chicken breasts were stored directly above ground beef in the drawers at the grill. Discussed with Operator and showed proper hierarchy on poster for future reference. Operator moved product.
Carbon dioxide/helium tanks not adequately secured. Two tanks by the dishwasher not secured. Operator secured with a bungee strap during the visit.
Commercially processed reduced oxygen packaged fish bearing a label indicating that it is to remain frozen until time of use no longer frozen and not removed from reduced oxygen package. Raw salmon stored on the cook line was no longer frozen and not opened. Discussed proper procedure with Operator. Operator cut open packages during inspection. Repeat from 3/31/2023
Wiping cloth chlorine sanitizing solution not at proper minimum strength. Very little solution was in the bucket, not covering the towels. Employee refreshed the solution and placed more solution in the bucket to cover the towels. Sanitizer Bucket (Chlorine 0ppm) (Chlorine 100ppm)
