Heat strip failed to turn black to indicate the sanitization temperature of 160 degrees Fahrenheit was achieved on the dish surface and/or high temperature holding thermometer did not reach 160F. Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired. Dish surface tested at 147F, machine gauge reading 155F. Repaired man arrived during inspection, machine retested at 165 dish surface, 180F on machine gauge.

Observed date on cheese pan of 4/10/25, employee confirmed date is correct and is the date the cheese was placed in the pan. Employee states pan of cheese was brought from walk-in to fry station approximately 1 hour prior to this inspection. Employee returned cheese to walk-in cooler for better cooling.
