Handwash sinks leaking on floor in bar, meat room, grill, and prep area. Manager placed pans under sinks to catch water until repaired.
Heat strip failed to turn black to indicate the sanitization temperature of 160 degrees Fahrenheit was achieved on the dish surface and/or high temperature holding thermometer did not reach 160F. Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired. Dish surface tested at 147F, machine gauge reading 155F. Repaired man arrived during inspection, machine retested at 165 dish surface, 180F on machine gauge.

Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Fry station cooler: Shredded cheddar 48F. Observed date on cheese pan of 4/10/25, employee confirmed date is correct and is the date the cheese was placed in the pan. Employee states pan of cheese was brought from walk-in to fry station approximately 1 hour prior to this inspection. Employee returned cheese to walk-in cooler for better cooling.
Handwash sink removed from food preparation/dishwashing area. Must be reinstalled in the same location where removed. Establishment plans show hand wash sink in meat production cooler. Observed plumbing on wall from previously installed hand wash sink. Manager confirms handwash sink was removed.

Nonfood-contact surface soiled with grease, food debris, dirt, slime or dust. Mold like substance on front of bar reach in cooler doors.
Plumbing system in disrepair. Hand washing sink in grill station leaking from drain pipe in to pan on floor. Hot water knob broken on dish pit sink.
Stored food not covered. Open box of chocolate chips in walk-in cooler. Manager covered chocolate chips at time of inspection.

Equipment and utensils not properly air-dried - wet nesting. Observed large plastic containers stacked while still wet.
In-use utensil stored in standing water less than 135 degrees Fahrenheit. Observed utensils stored in water that was 76F. Manager emptied glasses and put out new utensils.

Silverware/utensils stored upright with the food-contact surface up. Observed forks stored with food-contact side up. Manager had employee change to handle up and run back through dish machine.
Wet wiping cloth not stored in sanitizing solution between uses. Observed wet wash cloth not in sanitizer bucket in meat slicing cooler. Manager removed cloth and put in dirty cloth bin.
