Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. cooked pork ribs (45F - Cold Holding); in reach-in cooler drawer below grill. Operator stated they were brought out on cart about 10 minutes prior from walk-in-cooler. Operator stated drawer will stay closed to chill ribs. house made honey butter (47F-50F - Cold Holding) in bottom of reach-in cooler at front steak display case. Operator stated employee may have had tray out recently. Employee placed tray of honey butter in walk-in-cooler to chill.
Food-contact surface soiled with food debris, mold-like substance or slime. Holster for soda gun in bar area soiled. Operator had employee clean during this inspection.
Equipment and utensils not properly air-dried - wet nesting. Clean stacked pans on storage shelf in back room unable to properly air dry
Equipment in poor repair. Gasket on reach-in cooler below steak display case at front area torn.

Sewage/wastewater backing up through floor drains. Wastewater backing up from drain in warewashing area. Employee cleared out debris from drain and cleaned surrounding area. After running dishwasher a couple of times, drain filled back up. Operator emptied drains again and ceased from using dish machine until plumber repairs. Operator called plumber. plumber arrived during this inspection.

Observed high temperature dish machine only reaching 135F. Person in charge connected chlorine solution now dish machine is sanitizing properly. Dishwasher retested at (chlorine 100ppm)

Observed employee in dish area handle soiled dishes then put away clean dishes with no hand wash. Person in charge addressed employee with proper handwashing techniques.
Cutting board has cut marks and is no longer cleanable. Observed cutting board hanging in dish area with grooves and no longer smooth and easily cleanable. Person in charge voluntarily discarded.
