No paper towels or mechanical hand drying device provided at handwash sink near walk in freezer. The operator replaced the paper towels.
Wash solution in spray type hot water sanitizing dishmachine not reaching proper temperature according to manufacturer's specifications. Observed dishwasher temperature 144.1F -1st run, 155F - 2nd and 3rd run. The operator was able to prime the machine with sanitizer that measured 50ppm chlorine.
