Live, small flying insects in kitchen, food preparation area, food storage area and/or bar area. At bar area- near counter - observed approximately 7 small flying insects - operator cleaned and sanitized the area - killed approximately 3 small flying insects and removed.
Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. At reach in cooler drawers by stove- raw beef 45-46F- cold holding, raw chicken -45-46F cold holding- food not prepared or portioned today- food out of temperature for 2 hours- operator placed ice bags on food to quick chill.
Food being cooled by nonapproved method as evidenced by inadequate rate of cooling during time of inspection. At cookline cooler drawers by stove - Sliced cheese 50F at 11:20 to 50F at 11:50( cooling since 11:00)- at current rate of food will not reach 41F within remaining 3 hours- operator moved to reach In cooler to quick chill.
In-use utensil stored in standing water less than 135 degrees Fahrenheit. At bar area- utensil in water of 80F- operator removed utensils.
