Dishmachine chlorine sanitizer not at proper minimum strength. Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired and sanitizing properly. Observed the dishmachine chlorine solution at 0ppm. The operator was instructed to wash and sanitize all dishware, and equipment in the three compartment sink until the dishmachine is properly sanitizing.
Raw animal food stored over/not properly separated from ready-to-eat food. Observed raw pork stored over curry sauce in the reach in cooler in the prep area. The operator properly stored the raw pork.
Accumulation of lime scale on the inside of the dishmachine.
Buildup of food debris/soil residue on reach in cooler door handles on the cook line. The operator had the door handles cleaned.
