Raw animal food stored over or with unwashed produce. In the triple door reach in cooler, raw eggs stored over unwashed oranges and lemons. The eggs were moved down.
Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. In the steam table, meatballs (84-140F - Hot Holding). The employee stated that the meatballs were reheated in a pot prior to being placed in the steam table. The meatballs were stirred and the unit was turned up to reheat to 165F to hot hold.
Single-service articles improperly stored. On the cook line, 3 cases of lids and cups were stored on the floor. The cases were moved to shelves.

Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. In the front counter steam table, meatballs (88F - Hot Holding). The meatballs were reheated 1.5 hours ago and placed into the steam table. The temperature of the steam table was increased to rapidly reheat the meatballs to 165F to hot hold.
