Per operator, both items transfer to unit 2 hours prior to the inspection. Operator relocate both items to freezer for quick chill.
Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. Observed cooked chicken hot held in kitchen at 83F. Per operator, chicken cooked 1 hour prior to the inspection. Operator placed chicken in freezer for quick chill.

Employee failed to wash hands before putting on gloves to initiate a task working with food. Employee behind front counter tending to customers walked in to the kitchen and put gloves on to prepare food, no prior hand wash.
