Commercially processed reduced oxygen packaged fish bearing a label indicating that it is to remain frozen until time of use no longer frozen and not removed from reduced oxygen package. Observed approximately 15 packs of mahi mahi in commercially processed reduced oxygen packaging not cut open to thaw in walk in cooler. Chef removed to begin cutting packages to thaw properly.
