Vacuum breaker missing at mop sink on fitting/splitter added to sink faucets. -vacuum breaker currently on wrong thread, unable to provide adequate pressure to hose set up on one end of splitter. Advised to place vacuum breaker between hose and splitter at mop sink -prep/utility/dump sink near dish pit splitter added to faucet without any vacuum breakers to prevent potential backflow

Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. raw shrimp (46F - Cold Holding); raw beef (45-47F - Cold Holding); sour cream (47F - Cold Holding); shredded cheese (46F - Cold Holding); cooked pasta (45-47F - Cold Holding); cooked crab (46-48F - Cold Holding) inside walk in cooler not maintaining food at 41F or below. Manager stated person on site slated to fix walk in door. Advised to check status of walk in condenser. Significant condensation throughout walk in cooler. Next day callback inspection is required to verify compliance on cold holding temperatures. Manager had employees remove recently loaded and prepped food into working units up front, discarded what was in unit overnight..
Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. -chowder 131F in middle-143F at edge. Manager stated reheated to 165 at beginning of shift 2 hours prior. Reheated again to 165F.
