Raw animal foods not properly separated from each other in holding unit based upon minimum required cooking temperature: observed a box of shelled eggs on shelf in walk-in cooler over a bin of thawing swai fillets. Additionally, there is a pan of repackaged chicken tenders on shelf over container of baked beans and collard greens. General Manager moved the eggs to a lower shelf and the beans and collards to the next shelf over.
Manager or person in charge lacking proof of food manager certification and no other certified food service manager employed at this location: observed there is currently no Certifed Food Manager for the establishment.

Operating with an expired Division of Hotels and Restaurants license: Owner/Operator called the CCC and paid over the phone during the inspection.
Raw animal food stored over or with ready-to-eat food in a freezer - not all products commercially packaged: ziploc bag of pepperoni in door pocket with bags of raw shrimp. Employee moved the pepperoni to another shelf.
