Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. Observed: mashed potatoes in the hot well at 128°. These were moved to the oven.
Food-contact surface soiled with food debris, mold-like substance or slime. Observed: the first soda gun at the window bar is soiled.
No measuring device available for measuring utensil surface temperature when using hot water as sanitizer in a dishmachine. Observed: the thermometer for the hi temp dish wash machine was not working.

Raw animal foods not properly separated from one another based upon minimum required cooking temperature when stored in a freezer - not all products commercially packaged. Observed: raw shrimp(not commercially sealed) over unpacked flour and potatoes in the cook line reach-in freezer. All items were placed in a complying order.
Commercially processed ready-to-eat, time/temperature control for safety food opened and held more than 24 hours not properly date marked after opening. Observed: open gallon milk, no date of open mark. This was not opened today per the staff. Date added.
Food-contact surface soiled with food debris, mold-like substance or slime. Observed: the can opener with dried food debris on the blade. This was moved to dish. **Corrective Action Taken* ALSO, the far soda gun had buildup in a soda port.
