Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. cheese shredded cheddar cheese (51F - Cold holding ) Operator stated that they were preparing Food using the cheese was out for 45 minutes and they just put it back-nothing was out of temperature at this cooler only the cheese-operator move it back to the main cooler to cool down.
