Quaternary ammonium sanitizer not at proper minimum strength for manual warewashing. Do not use equipment/utensils not properly sanitized. Upon inspection, quaternary ammonia sanitizer at triple sink was showing 150ppm, with manufacturer instructions to use 200ppm. Manager called in to have dispenser recalibrated and manually made a sanitizer solution with chlorine, reaching required minimum strength of 50ppm.
