Food being cooled by nonapproved method as evidenced by inadequate rate of cooling during time of inspection. Observed: cooked chicken in the walk-in cooler, wrapped with condensation on the underside of the wrap, did not drop at least 1° in temperature during an 11 minute interval. The wrap was then loosened to allow/ promote cooling. ALSO, on the speed rack in the walk-in cooler, cooked rice, uncovered, did not cool at least 1° in an 11 minute interval. The pans were stacked close to each other, and the rack was close to the side shelf and the back wall.
