Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Observed in flip top cooler on cook line; pico de gallo (54F - Cold Holding); shredded cheese (54F - Cold Holding); salsa (55F - Cold Holding); chopped tomatoes (52F - Cold Holding); corn (52F - Cold Holding); Queso fresco (59F - Cold Holding); shredded cabbage (62F - Cold Holding) per operator held less than four hours. Operator placed items on ice. Observed on cook 2 drawers underneath flat top grill diced chicken (55-56F - Cold Holding); shrimp (55F - Cold Holding); beef (57F - Cold Holding); cut iceberg (59F - Cold Holding); onions and peppers (60F - Cold Holding); fish (56F - Cold Holding). Per operator held less than four hours. Operator moved items into cooler for rapid cooling.
No chemical test kit provided when using sanitizer at three-compartment sink/warewashing machine or wiping cloths. Observed no test strips at three compartment sink.
