Walk in cooler: blended tomato salsa (51F - Cooling) at 3:25 since 12:05 - 50F 3:40 Observing in deep covered container. At current rate of cooling product will not reach 41F within 4 hours. Operator removed from deep container and put in shallow pans uncovered.
