What the inspector wrote — 5 findings
Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Observed : red sauce on the kitchen prep table 45°. This had been out for 15 minutes, per the owner. This was placed back in the reach-in cooler, with no cover. An ice bath was discussed.

Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. Observed : rice cooked today, 95° in the rice warmer. A small portion was converted to time as a public health control, time for discard is 2:45pm. The rest was moved to the chest freezer to quickly drop to close to 41°, and then placed in the walk-in cooler, and covered for later use.
