Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. Observed cooked kebasi (110F - Hot Holding) in hot holding unit near end of buffet line. Less than 2 hours per operator. Operator turned up temperature to heat quickly.
Toxic substance/chemical improperly stored. Observed chemical spray bottle stored on cereal table. Operator removed for proper storage.
No written procedures available for use of time as a public health control to hold time/temperature control for safety food. Observed no written plan for items held on time. Provided operator with written plan.

Ready-to-eat, time/temperature control for safety food prepared onsite and held more than 24 hours not properly date marked. Observed ranch dressing made with buttermilk not date marked in flip top cold holding unit. Operator supplied date.
In-use utensil stored in standing water less than 135 degrees Fahrenheit. Observed utensils stored in water only reaching 71F. Operator moved for proper cleaning and storage.
