No monitoring of buffet/salad bar by employee trained in safe operating procedures. Observed self-service soda tower on exterior of bar area contaminated by customers tasting with fingers. Minors were observed licking their fingers, dispensing sodas, then touching soda nozzles and tasting sodas repeatedly. Inspector educated employees on monitoring self-service areas and soda nozzles and areas were washed and sanitized.
Clean glasses, cups, bowls, plates, pots and pans not stored inverted or in a protected manner. Observed 2 ice buckets stored not inverted next to ice machine in kitchen.
Employee eating in a food preparation or other restricted area. Observed employee eating personal food next to clean utensils and bowls on front side of expo station.

Equipment and utensils not rinsed between washing and sanitizing. Observed soiled metal bowl rinsed with spray hose then rubbed with a soap and sanitizer mixed solution and placed in drying area. Employee placed bowl in three compartment sink after inspector educated proper wash, rinse, then sanitize procedure.
In-use knife/knives stored in cracks between pieces of equipment. Observed knife stored between reach in cooler and prep table across from fryer station. Employee removed knife.
In-use tongs stored on equipment door handle between uses. Observed 2 pairs of tongs hanging on one door handles on cook line.
Wet wiping cloths stored in detergent and sanitizer mixed together. Observed wiping cloths being used in solution contains detergent and sanitizer per employee.

No chemical test kit provided when using sanitizer at three-compartment sink/warewashing machine or wiping cloths. No quaternary ammonium test kit could be found.
No measuring device available for measuring utensil surface temperature when using hot water as sanitizer in a dishmachine. No device for high temperature dishmachine in kitchen.
Ready-to-eat, time/temperature control for safety food prepared onsite and held more than 24 hours not properly date marked. In reach in cooler on cook line in kitchen, container of cut melon prepared three (3) days prior. Melon dated.
