Facility cooks, cools and vacuum package tequenos, empanadas, cachepas, pastels,shredded beef, ham and cheese sandwiches and arepas for sale in reach-in cooler in dining room without process waiver.

Per operator all items prepped yesterday and placed in unit 3 hours ago. Operator moved all items to other cooler to bring down temperature to 41F. One flat of eggs held at room temperature on second floor kitchen. Operator placed in cooler.

Observed handle touching flour and sugar in containers on second floor kitchen storage area by triple sink. Handle touching ice in ice machine at front counter on first floor.
