Observed multiple fish items and in reach in cooler on sushi line holding sushi items at temperatures of 49-51F. Person in charge stated fish was cut 20 minutes prior. Ambient temperature of sushi cooler was at 49F. Person in charge stated they empty the sushi cooler nightly to clean and turn it off over night. Upon arrival sushi cooler is turned back on.
