Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Observed cheesecake (50F - Cold Holding) in the front display case. The operator was unable to determine how long the cheesecake has been held. The operator discarded the cheesecake. Observed marinara sauce (54F - Cold Holding); shredded cheese (52F - Cold Holding); ricotta cheese (52F - Cold Holding); cut tomatoes (53F - Cold Holding); cooked sausage (51F - Cold Holding); ham (51F - Cold Holding) in the reach in cooler in the kitchen. The operator stated the potentially hazardous foods were pulled from the walk in cooler approximately 3 hours prior. The operator placed the foods back into the walk in cooler.
No paper towels or mechanical hand drying device provided at handwash sink in the kitchen. The operator provided paper napkins at the hand sink.
