Employee removed fixed hat and wiped hands on visibly soiled apron and after without washing hands employee handled ice scoop, discussed with operator, employee washed hands.

In kitchen cooked mushrooms ( 73F - Cooling) at 2:45 since 1:45 to 74F at 3:00; house made pizza sauce (126F - Cooling) at 2:45 since 2:30 to 121F at 3:00, at this current rate of cooling products will not reach 71F within 2 hours, discussed with operator who moved products to walk in cooler.

In kitchen container of fresh garlic in oil (52F - Cold Holding) per operator product removed from colder approximately 2 hours ago and held at room temperature until served with bread rolls. Discussed with operator who added product to time is a public health control.
