Commercially processed ready-to-eat, time/temperature control for safety food opened and held more than 24 hours not properly date marked after opening. Observed milk in the cooler by the wait station without a date mark. As per operator, milk was opened approximately 3 days ago. Operator labeled properly.

Observed potato pancakes at 10:00 (50F - cooling) for 1.5 hours to 47F at 11:30 in far left reach in flip top cooler in a shallow pan on cook line. As per operator item portioned today. Operator added bag of ice to quick chill.
