Raw wings (44-50F - Cold Holding), stored in rolling bin next to fryer, place there approximately 2 hrs ago from main walk in cooler. Operator intention is to keep cold until cooked and then cool down wings. Discussed placing on TIME but operator stated will keep on temperature and place back in walk in cooler.
Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. Fries (109-111F - Hot Holding), stored in front line at service expo window, place there approximately 5 mins ago. Discussed placing on TIME. Paperwork completed during inspection

Cook in kitchen prep area touched hair and face with gloved hands and immediately handled dry food products for preparation without removing gloves and washing hands. Manager coached employee on proper hand washing procedures. Employee washed hands correctly.

Heat strip failed to turn black to indicate the sanitization temperature of 160 degrees Fahrenheit was achieved on the dish surface and/or high temperature holding thermometer did not reach 160F. Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired. Dishwasher (Temperature 155-156F). Operator discussed with employee to use triple sink for sanitizing dishes when they come out of dishwasher. Operator stated he called to have serviced and should be here by lunch time.

Observed employee engaging in food preparation touch face with gloved hand and proceeded to engage with food preparation. Spoke to Chef he intervened and spoke to employee about hand washing. Employee removed gloves and washed hands properly.

Carbon dioxide/helium tanks not adequately secured. Observed CO2 tank on 1st floor not secured. Manager was able to secure CO2 tank during inspection.
Ceiling tile missing. Observed ceiling tiles pulled away on 3rd floor storage area. Manager stated they are working on AC units.
Employee wearing jewelry other than a plain ring on their hands/arms while preparing food. Observed employee engaging in food preparation with watch on.
