Handwash sink removed from food preparation/dishwashing area. Must be reinstalled in the same location where removed. Plans from 2007 state that there is a handwash sink on the cook line. No hand wash sink observed in that location. This area is no longer used to prepare or store food.
No plan review submitted and approved - renovations were made or are in progress. Must submit plans and plan review application to DBPR H and R Plan Review office located at 2601 Blair Stone Rd., Tallahassee, FL 32399-1011. Plans must be submitted AND approved within 60 days. This establishment is only being used to wash dishes and store food in the walk in. There are multiple pieces of equipment that are not in use. All equipment on the cookline is not in use. Dishmachine not sanitizing properly. Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired and sanitizing properly. High temperature dishwasher machine ran twice. Highest temperature 143F. Booster was not on. Technician for the facility turned on booster. Third test 159F

No measuring device available for measuring utensil surface temperature when using hot water as sanitizer in a dishmachine. Inspector asked employee how they are testing the dish machine and he stated he is observing the gauges. There was no test strip or high temp thermometer available. The technician who showed up at the time of inspection gave the employee a high temp thermometer to test.
