Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. Inside warmer at cookline: beans (119F - Hot Holding). Manager stated the beans were cooked today, transported hot, then placed into warmer for hot holding. Manager began reheating beans to 165F during this inspection.
No proof provided that food employees are informed of their responsibility to report to the person in charge information about their health and activities related to foodborne illnesses. One employee hired approximately two weeks prior has not signed the employee health reporting agreement. Manager had employee read and sign the health reporting agreement during this inspection.
Mobile food dispensing vehicle license number not permanently affixed on the side of the unit in figures at least 2 inches high and in contrasting colors from the background of the vehicle. License number not fixed to side of unit.
