Cookline - steam table - beef (116-120F - Hot Holding) - per operator holding less than 15 minutes. Operator moved to grill to reheat. Cookline - steam table - chicken (110-115F - Hot Holding). Per operator holding 1 hour. Operator voluntarily discarded chicken.
Wiping cloth sanitizer solution exceeds the maximum concentration allowed. Prep area - Sanitizer Bucket (Quaternary over 500ppm). Operator made new solution - quaternary 400ppm.
Cold Faucet/handle not working at hand sink. Water too hot to wash hands.
