Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Shredded cheese, cut tomatoes and cut lettuce held at 49F in flip top cooler. Bottom door was left open. Operator closed all doors. Rechecked after 30 minutes, No temp change. Operator removed all items to walk in cooler.
Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. Cooked Chicken (119F); Cooked Beef Steak (127F) in steam table. Operator removed double pans, items increased to over 145F.

Walk in cooler: Observed 2 sealed bags of cooked chicken with prep date of 5-9 no prep time. Refried beans, no date 2 bags- operator stated made yesterday Black beans, no date, 5 bags- operator stated made yesterday Observed 8 bags of cooked chicken dated 5-10 with no prep times. Observe 6 sealed bags with cheese, peppers and milk not dated. Observed 4 bags of sealed cooked ground beef dated 5-9 with no prep time. Discussed with manager to not seal bags. If bags are sealed then all bags must be labeled with production date, and time that the food was bagged up. Any products held within 48 hours or less do not need a plan.
