Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. In the kitchen rice warmer, white rice (71F - Hot Holding). The item was prepared this morning, less than 4 hours ago. The rice is being reheated to 165°F to hot hold.
