Employee failed to wash hands before putting on gloves to initiate a task working with food. Employee went from taking customers order to cleaning blenders and then put on gloves and prepared food for customers without washing hands. Discussed with employee who then washed hands.
Quaternary ammonium sanitizer not at proper minimum strength for manual warewashing. Do not use equipment/utensils not properly sanitized. Triple Sink (Quaternary 0ppm). Dispensing bag empty, Operator replaced dispensing bag, refilled sink to quaternary 200ppm.
Wiping cloth quaternary ammonium compound sanitizing solution not at proper minimum strength. Sanitizer Bucket (Quaternary 0ppm). Operator remade to quaternary 200ppm.
