Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. In the make table cooler to the left of the ovens on the back of the front counter sliced turkey (47F - Cold Holding). Inspector educated the operator on not filling containers above the fill line. The out of temperature turkey was on top, underneath the turkey is 41F cold holding. Operator removed the turkey above the fill line, iced the turkey for rapid cooling and placed it into the bottom of the make table cooler.
