In left fliptop upper, sliced tomatoes 46F at 2:55pm (cut cooling less than 1.5 hrs) to 49F at 3:30pm. Based on time and temperatures tomatoes will not reach 41F in 4 hrs. Manager moved tomatoes to walk in cooler to rapid chill.
