Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. In flip top reach in cooler behind across from register, sausage crumbs (46F - Cold Holding); swiss cheese (47F - Cold Holding). Products stocked this morning but lid had been open to make orders. Employee shut lid.

Employee touched soiled surface and then engaged in food preparation, handled clean equipment or utensils, or touched unwrapped single-service items without washing hands. On arrival to establishment, employee on front line was handling her cellphone. She then put away and began making smoothies without washing her hands. Manager coached employee on proper handwashing procedures.

Manager stated it was stocked this morning but filled over the fill line on pan. Manager removed product that was over fill line and put in bottom of reach in cooler to bring back down to 41F or below.
