Employee failed to wash hands before putting on gloves to initiate a task working with food. Employee entered kitchen from customer dining area area without washing hands employee placed on gloves and began to handle food products, discussed with operator, employee washed hands and changed gloves.
Quaternary ammonium sanitizer not at proper minimum strength for manual warewashing. Do not use equipment/utensils not properly sanitized. Triple Sink (Quaternary 100ppm) discussed with operator to correct to 200ppm.
Ice bucket/shovel stored on floor between uses. Discussed with operator who removed ice bucket from floor.
Standing water in bottom of reach-in-cooler. Discussed with operator to clean and sanitize interior.
