Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. In flip top cooler on make line, mozzarella cheese 51F. Cheese placed into service approximately two hours prior. Cheese moved to walk in cooler to cool.
Toxic substance/chemical improperly stored. Spray bottle containing yellow chemical cleaner stored on dry food storage rack by cranberry juices. Bottle moved and stored correctly.
