Time/temperature control for safety food reheated for hot holding not reaching 165 degrees Fahrenheit for 15 seconds within 2 hours. Sweet potatoes 114F-134F and Pulled pork 85F-114F reheating since 2 hours and 10 minutes in steam table. Cook placed both items immediately on the stove and quickly reheated above 170F for further hot holding.

Food being cooled by nonapproved method as evidenced by inadequate rate of cooling during time of inspection. Pork at 10:40 cooked at 9:30 (103F- cooling) Pork at 11:05 (103F - Cooling) pork in big pieces in covered container, in walk in cooler. Cook started pulling pork for quick cooling. At 11:15 pulled pork is 80F and placed in freezer.
Handwash sink used for purposes other than handwashing filling containers with water. Cook went to triple sink.
