Perimeter walls and roofs do not effectively protect establishment against environmental cross contamination or the entrance of pests. Establishment has open window concept with 2 air curtains, each covering half of the opening. One air curtain was turned off, operator turned it back on. Discussed with operator the importance of making sure they are fully functional while window is open.
