Employee dropped dirty dishes by dishmachine area and picked up whipped cream from reach-in cooler without washing hands at server station. Discussed operator proper handwashing procedures and employee washed her hands.
Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. In reach-in cooler at cook line; hard boiled egg no shell (48F - Cold Holding); cooked corn (49F - Cold Holding); cooked beans (50F - Cold Holding); chopped tomatoes (49F - Cold Holding); cooked jalapeño (53F - Cold Holding). Per operator all items placed in reach-in cooler for two hours. Operator moved all items to walk in freezer. Bar area; blue cheese olives (76F - ambient). Per operator blue cheese olives stored at bar for one hour. Operator moved blue cheese olives to reach-in cooler.

Staff was observed running food from kitchen and handling unwrapped items. Per operator this franchise company has been open 15 years and nothing has ever been cited, it is a company policy that they wear the hair down.

Operator is doing a special process, conducting reduced oxygen packaging, cooking time/temperature control for safety food to a time and temperature combination lesser than those in the Food Code or operating a molluscan shellfish tank for human consumption without a HACCP plan approved by the Division of Hotels and Restaurants. HACCP plan has been received by Tallahassee but not yet approved.
