Heat strip failed to turn black to indicate the sanitization temperature of 160 degrees Fahrenheit was achieved on the dish surface and/or high temperature holding thermometer did not reach 160F. Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired. Checked dish machine not sanitizing properly final rinse not reaching 160f engineering is working on the dishmachine at time of inspection. Recommend to use 3 compartment sink wash, rinse and sanitize checked 700 ppm concentration final rinse. Until dishmachine is repaired.

Comminuted meat not reaching a minimum internal temperature of 155 degrees Fahrenheit for 17 seconds or equivalent time/temperature combination as specified in cooking chart. Observed hamburgers temperature 143°f placed on the front counter on the menu served as a smashed burger did not cook ground beef to 155°f. Customer ordered a smash burger.
