Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Liquid eggs on cart in kitchen at 57f for 1 hour. Upon observation, liquid eggs are sitting in ice bath that has half melted. Operator moved all items on cart to walk-in cooler to rapidly cool.
Exterior door has a gap at the threshold that opens to the outside. Back door has gap at top and bottom corners.
