Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Buttermilk pulled from refrigeration approx 25-15 mins prior @55° cold holding, placed in reach in freezer to rapid chill. Commerically prepared chutney at 54°, placed in ice to rapid chill.

Signage was given to operator at their licensing inspection on Oct., paperwork found and being posted at location.
