Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. meatballs (64-98F - Hot Holding) item in steam table for 1.5 hours, manager stated they do reheat item to 165F in the oven then places into steam table, operator chose to place item in reach in freezer to start the cooling process.
