Dishmachine chlorine sanitizer not at proper minimum strength. Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired and sanitizing properly. Dishmachine testing at 0ppm. Person in charge replaced sanitizer, primed and retested at 100ppm by end of inspection.

Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Buffalo mozzarella in pizza make line at 45F. Person in charge moved to reach in freezer to chill. Retested at 41F by end of inspection.
Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. Soup in warmer near sauté station at 124-126F. Person in charge reheated to 170F. Water level was low, person in charge added water.

Observed employee refilling by adding additional water to sink with premixed sanitizer. Person in charge remade and tested at 300ppm.
Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Chicken in pizza make line at 51F. Observed lids open during inspection. Other items in unit 43F or below. Person in charge moved to other reach in cooler to rapidly chill. Retemped item at 47F by end of inspection. Feta cheese, fior de latte held on make line unrefrigerated at 54-56F. Recommend holding on time. Person in charge added to time paperwork during inspection.
