Pasta salad made around 2PM (77F - Cooling, retemped at 72F) Stored in deep covered container in reach in cooler behind register area. Operator moved to freezer to cool, retemped at 72F. Operator divided into two containers and returned to freezer to cool. Retemped at 52F at 4:30PM. Discussed proper cooling with operator.
