Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Observed in reach-in cooler next to grill: chicken (54F - Cold Holding); ham (51F - Cold Holding); pork (56F - Cold Holding); hamburger (44F - Cold Holding); tomatoes (54F - Cold Holding). Manager stated the door was opened a lot during the previous two hour lunch service. Foods moved to reach-in freezer for faster cooling.
Food-contact surface soiled with food debris, mold-like substance or slime. Cutting board soiled with mold-like substances.
Cutting board has cut marks and is no longer cleanable. Cutting board grooved.
Mobile food dispensing vehicle license number not permanently affixed on the side of the unit in figures at least 2 inches high and in contrasting colors from the background of the vehicle. License number not on exterior of unit in 2" tall figures.
