Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Container of "Silk" brand Coconut Milk (unsweetened), located in the small refrigerator next to the ice machine (50F - Cold Holding); Opened container of "Silk" brand soy milk located in the small refrigerator next to the ice machine (45F - Cold Holding). Product was in use for two hours per Operator. Product was moved to tall cooler for rapid cool-down. Discussed with Operator alternative methods of holding cold-held products used frequently during service.

Ready-to-eat, time/temperature control for safety food prepared onsite and held more than 24 hours not properly date marked. Observed prepared salsa, cooked shredded pork, opened tub of Cream Cheese in the tall cooler with no date marking. Operator stated product was approximately three days old. Discussed importance of date marking, as well as proper procedures for date marking. Operator properly dated all products requiring marking.

Accumulation of black build-up observed on the ice scoop (properly stored inside the machine) and in the upper left corner of the interior of the ice machine. Discussed cleaning of ice machine interiors with the Operator.

Observed plastic ramekin in food product container in the prep area, as well as a scoop in the flour bin with the handle touching the product, a fork in the container of salsa in the tall reach-in cooler with the handle touching the product and a portioning scoop in the cocoa powder stored touching the product.
