Observed employee engaging in food preparation touch apron and proceeded to touch equipment. Inspector intervened and employee removed glove and washed hands.

Dishmachine chlorine sanitizer not at proper minimum strength. Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired and sanitizing properly. Observed Chlorine Dish machine at 0ppm. Chemical bucket was empty, manager had employee replace during inspection. Took second test at 100ppm.
