Observed by the entrance a new steam table, new walls going into the back side of building and along side the seating area. Also, new stainless steel implemented on walls and new floors throughout the establishment. No structural changes, just remodeling done.

Observed ham croquettes (110F - Hot Holding); chicken empanadas (117F - Hot Holding) at the front counter. As per the manager the items had been there for approximately 1 hour. The cook reheated the items to 180°F and turned up the heat on the holding cabinet.
